    1. Selection of raw materials. Dry vegetable raw materials require high dry matter content, low crude fiber and waste, high edible rate, good maturity, freshness, good flavor, no rot, and serious damage.

    2. Cleaning. Manual cleaning or mechanical cleaning is adapted to remove sediments, impurities, pesticides and microorganisms attached to the surface of the raw materials so that the raw materials basically meet the dehydration treatment requirements and ensure the hygiene of the products.

    3. Organize. Remove insoluble and unacceptable parts, such as skin, roots and old leaves, and cut them properly. Removing the outer skin of the raw materials can improve the edible quality of the product and is beneficial to dehydration and drying. Cutting is carried out by mechanical or manual operation, and raw materials are cut into certain sizes and shapes to evaporate water. It is usually cut into pieces, strips, granules, and filaments. The shape, size, and thickness shall be determined according to different types and outlet specifications. For some vegetables, such as onion and garlic, the gelatin-juice should be washed continuously with water until the gelatin solution is washed clean to facilitate drying and dehydration and make the product more beautiful.

    4. Color protection. Dehydrated vegetables are blanched to protect their color. Some raw materials are still treated with sulfur after blanching or drying.

    5. Freeze drying. The best drying methods are freeze drying, vacuum drying, and microwave drying. However, considering the cost and economic benefits, the most commonly used vegetable drying methods are hot air drying equipment and a combination of new microwave drying and hot air drying.

    6. After treatment. After drying the plant materials, some can be packaged directly after cooling, and some need to be softened, selected and pressed for packaging.
